Serve this exquisite soup to your family or guests. Tastes
like chicken soup but without the chicken. Wonderful for
weight loss. Quick and easy to prepare. Make a big batch
and serve again the next day.
1) Peel potato (specially if green under skin). Cut carrot and potato into small cubes. Mince onion and parsley.
2) To a saucepan add water, potato, carrot and onion. Bring to a boil and simmer with lid on for 10 minutes.
3) In a bowl stir cashew butter and a little soup stock gradually till creamy. To the soup add creamed cashew butter, soy sauce, black pepper and parsley.
4) Stir in Mandarin oil right before serving.
